Aappam with coconut milk

Aapam is one of the varieties made out of rice batter. Ofcourse it varies from the typical dosa/uthappam by the way the batter is prepared. The consistency should be watery as compared to the idly batter. Let's look at the ingredients needed for making aappam.



Ingredients:

1. 1.5 cups of rice, any rice not necessariy idly rice

2. 2 tbsp of grated coconut

3. ghee/oil for smearing aappam.

4. 1/2 tsp salt

5. 2 cups of water

6. sugar to taste

7. 2 cups of coconut milk


Steps:

1. Soak the rice overnight or atleast for 8 hours.

2. Once it's soaked for the given period of time, wash it well with running cold water.

3. Add the soaked and washed rice to the mixer. To this add 2 tbsp of coconut and grind it well to a smooth mixture.

4. Now, to this add salt and 2 cups of water. The battery should be water and is ready to go into the a pan/kadai.




5. Heat a pan or kadai, grease it with ghee or oil. Take a laddle full of batter and pour it into the pan.



6. If you are using kadai, then rotate the kadai so that the batter touches the sides of pan as shown in the picture.



7. Close the pan with a lid and let it cook. The sides of the appam gets brown and it starts to come out of the pan as seen in the picture. Aappam is ready.





8. Mix 2 tsps of sugar with coconut milk. Serve the aappam with coconut milk.

Cauliflower fry without oil

Cauliflower pakoda is a crispy evening tea time snack. It is also one of those popular street foods in chennai. Also in bakery shops, they sell cauliflower pakodas freshly made every evening in front of our eyes. On a lazy day, we shall buy these pakodas and have it as a side dish for our lunch/dinner. I am sharing a recipe of cauliflower pakoda without deep fry in oil, using an oven. I once tried to make chocolate flavoured cake. You know what i mean ? Well it's not a chocolate cake, but i wanted to add little bit of melted chocolate to the batter and I used a microwave safe bowl to melt the chocolate. Uff! the chocolate did not melt evenly instead, the bowl started to burn. Never in my world, i know that the microwave needs to be set in the lowest power mode and the chocolate needs to be melted by keeping it in the microwave and check every 30 seconds. Over the period of daily cooking and learning, i thought double boiler method would be the best way to melt chocolates and of course without burning anything! We grew up in a community where the kulfi wala comes to our area on a regular basis during summer holidays.  Kids would jump and go to get kulfi. Besan Halwa/Bengal Gram Halwa

Besan halwa recipe is so cool and damn easy. You can prepare it even if you do not have cooking skills. Trust me, with just minimal ingredients besan halwa is made. Also unlike atta halwa, where continuous stirring is required to get the desired halwa consistency, besan halwa takes a lot lesser time and of course less stirring. Barotta kurma is one of those most sought out street foods. It's easily available anywhere on the street food stalls near by market place, shopping area and the like. You know why it is so popular, ofcourse the taste! Some might add eggs to these barotta dough, but we are going to see the recipe without eggs. Eggless Molten chocolate lava cake

Who would not like chocolate cakes ? Well, i know you like it too, otherwise you would not be reading this recipe right now :) This is an eggless version of molten chocolate lava cake and just uses oil and not even butter. Hope you would try this recipe at your home and like the way it chocolate melts down from inside. I have added little bit of instant coffee powder to enhance the chocolate flavour of the cake. Since it is molten cake, you can just make a batch of 4 or 5 cakes at one go as it is the best when served immediately.
