Aapam is one of the varieties made out of rice batter. Ofcourse it varies from the typical dosa/uthappam by the way the batter is prepared. The consistency should be watery as compared to the idly batter. Let's look at the ingredients needed for making aappam.
Ingredients:
1. 1.5 cups of rice, any rice not necessariy idly rice
2. 2 tbsp of grated coconut
3. ghee/oil for smearing aappam.
4. 1/2 tsp salt
5. 2 cups of water
6. sugar to taste
7. 2 cups of coconut milk
Steps:
1. Soak the rice overnight or atleast for 8 hours.
2. Once it's soaked for the given period of time, wash it well with running cold water.
3. Add the soaked and washed rice to the mixer. To this add 2 tbsp of coconut and grind it well to a smooth mixture.
4. Now, to this add salt and 2 cups of water. The battery should be water and is ready to go into the a pan/kadai.
5. Heat a pan or kadai, grease it with ghee or oil. Take a laddle full of batter and pour it into the pan.
6. If you are using kadai, then rotate the kadai so that the batter touches the sides of pan as shown in the picture.
7. Close the pan with a lid and let it cook. The sides of the appam gets brown and it starts to come out of the pan as seen in the picture. Aappam is ready.
8. Mix 2 tsps of sugar with coconut milk. Serve the aappam with coconut milk.
