Cabbage egg poriyal is a slight variation to the regular cabbage poriyal. Poriyal is the Tamil name of any vegetable stir fry. This side dish can go well with Rasam rice, curd rice, sambar rice and roti.
1 medium sized cabbage
1 medium sized onion
3 dried red chillies, broken
3 garlic pods, finely chopped
1/2 tsp mustard seeds
1/2 tsp split black gram
1 tsp cumin seeds
2 eggs
1/2 tsp turmeric powder (optional)
1 tbsp chopped coriander leaves
salt to taste
1 tsp oil
Steps:
3. Add finely chopped onions, and then saute it for about 4 minutes till the onions become translucent.
4. Meanwhile, finely chop the cabbage and add it to the pan. to this add, turmeric powder and salt. No need to add water as cabbage has water content and that itself is enough to cook the vegetable.
5. Close the pan with a lid and let it cook for about 8 minutes on medium flame. Occasionally stir the cabbage in between.
6. Now, check if there is any water residue. If there is still water that is release from cabbage, remove the lid and keep stirring till water dries out.
7. Push aside the cabbage, add little bit of oil to the pan. Add the eggs to the pan. Let it stand for a minute and then scramble it. Let the eggs get cooked.
9. Garnish with chopped coriander leaves (optional).
