Chicken stir fry is a way of marinating chicken with Indian masala for an hour or overnight depending on the time available for us. This dish can go well with roti or biriyani. Let's take a quick look at the things we need.
Ingredients:
1 pound chicken
1 tsp red chilli powder
1 tsp garam masala powder
1/2 tsp turmeric powder
2 tsp curd
1/2 tsp salt
1 tsp chopped coriander leaves
Tempering:
2 tsp oil
1 tsp cumin seeds
1 tsp grated pepper corns
Steps:
1. Clean the chicken very well by adding little turmeric powder. This helps reduce the raw smell of the chicken.
2. Add all the ingredients mentioned above except coriander leaves. Mix them well and set it aside for at least 15 minutes. The marination time may vary upto overnight depending on the time you have.
3. In a pan, add oil. when the oil warms up, add cumin seeds and pepper. when the cumin seeds start to sputter add the marinated chicken on medium flame.
4. Keep stirring at constant intervals. No need to add oil as chicken itself releases oil.
5. It will take 15 to 17 minutes for the chicken to cook well. Finally garnish with chopped coriander leaves.
