Egg fried rice is an easy to make recipe that goes well with any fried items like chilli chicken, pepper chicken, okra fry, potato fry, veg manchurian or even chips. You can also make egg fried rice with left over rice. Here is the list of ingredients:
Ingredients:
4 cups of cooked white rice
2 tbsp oil (crisco oil)
1 tsp salt (morton salt)
1 bunch of spring onions, finely chopped
1 tsp pepper powder
4 eggs, well beaten
1 tsp soy sauce (optional)
2 green chillis, finely chopped
Steps:
1. Heat oil in a pan. Add finely chopped white part of the spring onions and finely chopped green chillies. Fry for 2 minutes on low to medium flame.
2. Add beaten eggs to the pan and let it cook for a minute. Then add salt and pepper. Saute well for 3 minutes.
3. Make sure the flame is on high now. Then add the cooked rice and soy sauce. Add some more pepper powder.
4. Give it a good mix or toss the pan well so that the rice gets mixed well with rest of the ingredients.
Add the green part of the spring onions(nicely chopped).
5. Mix well and switch off the flame. Egg fried rice is ready to serve. Here I'm gonna eat it with pepper chicken :)
