Grilled Salmon Fish

Atlantic salmon fish is one of those rich foods having omega 3 fatty acids. I often cook fish at home. It's either tilapia or salmon. The traditional way of making fish fry is in the tava using little oil, called shallow fry. My mom makes fish fry that way. I used the same masala for fish marination but instead of shallow fry on a pan, i grilled the fish in conventional oven for about 25 minutes. Usually fish gets cooked faster so we might just need to grill for 10 minutes in case of small pieces. I used the big pieces of salmon as such which required about 25 minutes to get cooked completely.

Ingredients:

1 pound Atlantic salmon fish
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp garam masala powder
1 tbsp oil
2 tsp chopped coriander leaves or parsley leaves
1 tsp black pepper powder
2 tsp lemon juice
salt to taste

Steps:

1. Clean the fish pieces thoroughly by adding a pinch of salt and turmeric powder. Then to the fish pieces add chilli powder.

2. Add coriander powder, garam masala, salt, oil, pepper powder, turmeric powder and lemon juice.
Coat both sides of the fish pieces well with the masala.

3. Top it with chopped parsley or coriander leaves. Let it stand for 15-20 minutes before we grill them in the oven. If you do not have oven, you can shallow fry the fish pieces in a pan by adding little oil.

4. Now, preheat the oven to 350 F. The fish pieces are well marinated and ready to get grilled! Make few slits alongside the fish so that the masala gets into the fish like the way I have done here.

5. Place the fish pieces in the oven and broil on high for 12 minutes. I have used big pieces hence using high broil option. If you cut fishes into small pieces use low temperature while broiling.

6. Salmon fish releases oil while frying. You can see white slushy liquid in the fish, it's nothing but the oil from the fish.

7. After 12 minutes, flip the fish pieces and broil on high for another 12 minutes. Check the fish if it's cooked well. If you need it to be well done, you can broil another 5 minutes. This is how the broiled fish looks like. It tasted real good.

8. Grilled Salmon fish is ready to serve.

9. I had it with tilapia fish curry for my dinner. Here is a look at my dinner plate.

Palkova / Thirattupaal/ Sweet Khoya

Homemade sweets are always special as you have control over the sweetness ( well, i agree you cannot compromise on the sugar added to a sweet recipe) however we can assure brown sugar or jaggery could be substituted wherever possible and free of food colors and any other preservatives. In today's recipe, i'm going to share about a simple two-ingredient recipe which uses cow's milk - its palkova aka thirattupaal (sweet khoya). The process is quite cumbersome, however with a heavy bottomed non-stick pan, you can skip stirring quite often and sit back and watch while it gets simmered without being burnt. Choose the right vessel for this dish and you would be rest assured a hassle free recipe. Let's get into recipe and the steps. You can use full cream milk or buffalo's milk instead of cow's milk. Cow's milk gives the best of taste you can ever get! Happy ready and hope you try out this recipe at your home and share your valuable feedback. Ingredients

Village style chicken kuzhambu/ gravy

Village style chicken kuzhambu is spicy and dense in texture - making it an awesome pair for white rice. You can also try this gravy with roti varieties too, but white rice is the best combo for this dish. The spices like coriander seeds, dry red chillies, black pepper corns, green cardamom, cinnamon stick and sesame seeds are dry roasted till they turn aromatic and little smoky on a medium flame. Then cooled down and ground to a fine paste using a little bit of water. Meanwhile, the chicken pieces (i prefer chicken wings for this dish though) are marinated with a fat pinch of turmeric powder, red chilli powder and ginger garlic paste. What non-veg dish would go without ginger garlic and turmeric ???!! Guess what - none of them :) Then, just saute green chillies, bay leaf and onions in right amount of oil for few minutes and add the ground paste with red chilli powder and desired quantity of water. The gravy is allowed to boil on high flame then adding marinated chicken pieces

Egg capsicum curry

Egg capsicum curry is little more spicy and equally tasty. The usual routine of eating either boiled eggs or egg burji or omlette is boring at times and we would like to eat something new recipe with boiled eggs. Capsicum is always available at our home, as i would prefer to use bell peppers in one or the other dish atleast thrice a week. If not one whole capsicum, atleast i use a portion of it in my lunch meals. Sometimes, i use all the colors available in the market for chicken skewers as they give a more appeasing look to the kabob! Each tastes different. The yellow bell peppers are spicy as compared to it's siblings - green, red and orange. The egg capscium curry is made using sliced onions, ginger-garlic paste, green chillies and garam masala. That extra hot spiciness to the dish comes from the freshly ground black pepper corns, fennel seeds and cumin seeds. Let's quickly see what goes into the pan for making this yummy egg curry. Ingredients: 4 eggs 1 large o
