Chocolate dipped strawberries

Baklava

Baklava - a delightful dessert from the middle Eastern part of the world. If you ever had a chance to eat at a Mediterranean restaurant, then you must have tried this dessert at least once. This is the one and the only dessert you get to see in their menu list and it tops everything else when it comes to sweetness; as this dessert is made out of layers of filo dough, layers of butter, chopped nuts and sugar syrup. As I write the recipe, I have already swallowed two pieces of baklava for my breakfast. It is so very tempting and I just can't control my taste buds. I'm sure you will love it too!

Ingredients:

4 oz filo dough
50 gms of almonds
100 gms of pistachios
100 gms of Walnut
1 tsp of cinnamon powder
1 tsp sugar
4 oz butter

Syrup:

1 cup of sugar
1 cup of water
1/2 cup of honey
1 tsp vanilla essence

Steps:

1. Thaw the filo dough roll as per the packet instructions. I have thawed the filo dough sheets for about 2 hours.

2. Let's make the syrup first. In a sauce pan, add sugar and water. Let it boil on medium flame.

3. Once the sugar dissolves, add vanilla essence and honey. Mix well and let it simmer for 20 minutes. Switch off the flame after 20 minutes and let it cool.

4. Preheat oven at 350-degree Fahrenheit or 180-degree Celcius for at least 20 minutes.

5. Melt the butter in a bowl and keep it ready.

6. In a blender, add the almonds, pistachios and walnut and chop them coarsely.

7. In a bowl, add chopped nuts, cinnamon powder and a tsp of sugar. Mix them well and keep it aside for layering.

Tip: You can also use organic brown sugar.

8. Grease a 9 * 13 inch pan with butter on the bottom and the sides. I have used a silver foil and then buttered it.

9. Once the filo dough is thawed, remove it from the paper wrap and place it on your kitchen countertop or the work surface. Keep a damp towel ready, to cover the filo dough as we work on layering the sheets.

Tip: Baklava is nothing but alternate layers of filo dough, butter, chopped nuts up to 8 layers. When you are making the dessert for the first time, it might take half hr to one hour.

10. Take two sheets of filo dough and place it in the greased pan. Brush the sheets with a melted butter.

Repeat it until there are 8 sheets of filo dough in the pan. This forms the base.

11. Add 3-4 tbsp of chopped nuts on top of the buttered filo dough.

12. Now add two sheets of filo dough. Brush it with melted butter.

13. Repeat the process until 7-8 layers of chopped nuts are assembled. I have made 7 layers of chopped nuts and filo dough.

This is how the layers look at the sides.

14. Finally, the top most layer has filo dough brushed with butter. To this add another 3 layers of filo dough with butter. Now, we have 8 sheets of filo dough on top.

15. Once the assembling is complete, run a wet knife across the baklava layers to slice them into triangles or any other desired shape.

16. Place the pan in the oven and bake at 350 degree fahrenheit for about 45-50 minutes or until the baklava turns golden and crispy.

Tip: You can check after 45 minutes. Mine got baked with a golden color and crispy texture at 45 minutes.

17. Once removed from the oven, immediately pour the sugar syrup over the baklava.

18. Since it is too hot, sugar syrup gets absorbed quickly.

19. Top the baklava with some chopped pistachios.

20. Wait it is warm and then cut the baklava into pieces as marked already. Serve with a spoon of sugar syrup on top of the baklava. Mouth watering, sugar glazy baklava is ready to eat!

Chocolate dipped strawberries

I once tried to make chocolate flavoured cake. You know what i mean ? Well it's not a chocolate cake, but i wanted to add little bit of melted chocolate to the batter and I used a microwave safe bowl to melt the chocolate. Uff! the chocolate did not melt evenly instead, the bowl started to burn. Never in my world, i know that the microwave needs to be set in the lowest power mode and the chocolate needs to be melted by keeping it in the microwave and check every 30 seconds. Over the period of daily cooking and learning, i thought double boiler method would be the best way to melt chocolates and of course without burning anything! Double boiler method helps not to burn the vessel in which we melt the chocolate. It is basically a sauce pan filled with one fourth of water and boil it. Once the water starts boiling, place the chocolate containing vessel inside the sauce pan (make sure, the vessel does not slide and get water into it, that is why we choose to fill one fourth of the sa

Krishna Jayanthi or Janmashtami is celebrated all over India and by Indians all across the world. On this day, several delicacies were home cooked and served to Lord Krishna. Even if you do not have all the time to prepare the special sweets and savories by yourself, you can still worship Lord Krishna by offering butter, curd and a handful of flattened rice(poha); Lord Krishna happily blesses us with all the wellness and goodness in this life. I made rava(semolina) laddu, poha sweet pongal, kai murruku/chakli(besan flour fritters) for this year's Krishna Jayanthi and got the blessings of Krishna :) I'm so very happy to share the rava laddu recipe with you all. No Churn No egg Mango icecream

Ever wondered how to make icecream at home when you dont have ice cream churner or not even a electric hand blender. Well, i have made mango icecream without an ice cream machine and without eggs. Of course i did not even have an electric blender with me. I tried to make it with a regular mixie (Preethi mixie) and it turned out to be a perfect ice cream, with no preservatives unlike the store bought ones. Ingredients: 1 ripe mango 1 cup condensed milk 1 cup heavy whipping cream 15-18 almonds Steps: 1. Wash and peel the mango skin. Cut the mango into small chunks. Add it to the mixie. Blend it smoothly. 2. Add condensed milk to the mixie. Blend it smooth for a minute. 3. Now, add heavy whipping cream. Blend it for 2-3 minutes until it becomes creamy.   4. Transfer the contents to a plastic container or a pan, you can cover it with a cling wrap and then a foil. The simplest method is to use an old ice cream box. Here I have used ice cream container. Hot Chocolate

I have some fond memories around hot chocolate drink. While i was working away from my home country, whenever i stepped into a coffee shop i was so reluctant to order any drinks from there. The reason is the coffee we get there is only black coffee unless and otherwise it is a frappuccino or a cappuccino or something of that sort, which is no way close to our filter coffee or the instant coffee we get here in chennai. One of my friend ordered hot chocolate for me and she said hot chocolate tastes close to bournvita and since then i order hot chocolate and really liked the flavor too. There were so many instant dry recipes for hot chocolate, however i always wanted to make it fresh and immediately be served. Here is one such recipe today for you. Ingredients: 1 cup of milk 2 tbsp fresh cream or malai 1 tsp of cocoa powder (sweetened or unsweetened) 1 or 2 tsp of sugar based on the cocoa powder used, or as per taste 1/2 tsp cocoa powder for dusting Steps: Add milk to

Palkova / Thirattupaal/ Sweet Khoya

Homemade sweets are always special as you have control over the sweetness ( well, i agree you cannot compromise on the sugar added to a sweet recipe) however we can assure brown sugar or jaggery could be substituted wherever possible and free of food colors and any other preservatives. In today's recipe, i'm going to share about a simple two-ingredient recipe which uses cow's milk - its palkova aka thirattupaal (sweet khoya). The process is quite cumbersome, however with a heavy bottomed non-stick pan, you can skip stirring quite often and sit back and watch while it gets simmered without being burnt. Choose the right vessel for this dish and you would be rest assured a hassle free recipe. Let's get into recipe and the steps. You can use full cream milk or buffalo's milk instead of cow's milk. Cow's milk gives the best of taste you can ever get! Happy ready and hope you try out this recipe at your home and share your valuable feedback. Ingredients
