Having biriyani masala while making any type of biriyani makes one's life much easier. I tend to cook biriyani more often since the time i prepared this home made biriyani masala powder. Let's take a quick look at the ingredients we need.

Ingredients:
10 long dried red chillies
12 bay leaves
20 cloves
5 1-inch cinnamon sticks
3 tbsp stone flower
15 cardamom
1 tbsp black peppercorns
1 tsp cumin seeds
4 tbsp coriander seeds
8 black cardamom
5 star anise
5 mace
3 tbsp saunf
2 tbsp caraway seeds
Steps:
1. Dry roast red chillies, bay leaves and cinnamon sticks together on medium to low flame till it gets roasted nicely.
2. Then transfer it to a plate to cool completely.
3. Dry roast cloves, cardamom, black cardamom, black peppercorns, stone flower, mace, star anise, saunf and caraway seeds together on medium to low flame for 5-6 minutes. Do not over roast it as the raw smell goes away and we need to retain the aroma of these spices.
4. Transfer it to a plate and let it cool completely.
5. Dry roast the coriander seeds and cumin seeds together till they turn mild brown on medium flame. Transfer the contents to a plate and cool completely.
6. Add all the dry ingredients to a blender and grind it to a smooth mixture. Voila! Biriyani masala is ready.
