Chocolate dipped strawberries

Eggless Banana walnut cupcake

Banana and walnut go well together. I tried banana walnut cakes before, but this time i wanted to make cupcakes with the same combination without egg.



Ingredients for cupcake:

1 cup all-purpose flour (250 ml cup)
2 ripe bananas
1/2 cup sugar or brown sugar
1 tsp baking soda
1/4 tsp salt
1/2 cup vegetable oil
1/2 cup chopped walnuts

Ingredients for Frosting:

1/2 cup butter
1/2 cup sugar
1/2 cup heavy whipping cream

Steps:

1. Preheat the oven to 350 F. Place the cupcake liners to the cupcake tray. I personally prefer cupcake liners as they preserve the freshness of the baked cupcakes especially on the sides of the cupcake.



2. In a bowl, sift together flour, baking soda and salt. Repeat this process twice as it will make sure there are no lumps and the dry ingredients are mixed well. Now, the dry ingredients are ready.



3. In another bowl, mash the bananas with a fork or a hand mixer.



4. Add oil to the bananas and mix well.


5. Add sugar and mix well. Now the wet ingredients are ready.



6. Pour the wet ingredient to the dry ingredient bowl. Fold together gently. Do not over mix or beat the batter.


7. Add chopped walnuts and retain few of them for topping.


8. Mix the batter once and immediately transfer to the cupcake tray.


9. Fill only 3/4 of each of the cupcake liners, allowing room for the raising of the cupcakes.


10. Top each of the batter filled cupcake liners with few chopped walnuts.


11. Place the cupcake trays on the middle rack of the oven and bake at 350 F, for 25 to 28 minutes. Mine got baked at 25 minutes.


12. After 25 minutes, insert a toothpick/fork at the centre of the cupcake and see if it comes out clean. If not bake for few more minutes until a toothpick inserted comes out clean.


 13. Remove the cupcakes from oven and let it cool for 10 minutes. Meanwhile, prepare the frosting.







14. Beat together sugar and butter till it becomes creamy, then add heavy whipping cream. Beat it further till it peaks stiff. Transfer the frosting (whipped contents) to a frosting bag or a ziplock cover. Top the cupcakes with frosting. You can also add any kind of fruit toppings. Catla fish fry

Fish is rich in omega 3 fatty acids and big ones like catla, salmon, rohu are all really flesh ones which tend to be of lean meat texture. It's good to try meat like recipes with such fish. Homemade sweets are always special as you have control over the sweetness ( well, i agree you cannot compromise on the sugar added to a sweet recipe) however we can assure brown sugar or jaggery could be substituted wherever possible and free of food colors and any other preservatives. In today's recipe, i'm going to share about a simple two-ingredient recipe which uses cow's milk - its palkova aka thirattupaal (sweet khoya). The process is quite cumbersome, however with a heavy bottomed non-stick pan, you can skip stirring quite often and sit back and watch while it gets simmered without being burnt. Cauliflower fry without oil

Cauliflower pakoda is a crispy evening tea time snack. It is also one of those popular street foods in chennai. Also in bakery shops, they sell cauliflower pakodas freshly made every evening in front of our eyes. On a lazy day, we shall buy these pakodas and have it as a side dish for our lunch/dinner. I am sharing a recipe of cauliflower pakoda without deep fry in oil, using an oven. I once tried to make chocolate flavoured cake. You know what i mean ? Well it's not a chocolate cake, but i wanted to add little bit of melted chocolate to the batter and I used a microwave safe bowl to melt the chocolate. Uff! the chocolate did not melt evenly instead, the bowl started to burn. Never in my world, i know that the microwave needs to be set in the lowest power mode and the chocolate needs to be melted by keeping it in the microwave and check every 30 seconds. Over the period of daily cooking and learning, i thought double boiler method would be the best way to melt chocolates and of course without burning anything! Egg capsicum curry

Egg capsicum curry is little more spicy and equally tasty. The usual routine of eating either boiled eggs or egg burji or omlette is boring at times and we would like to eat something new recipe with boiled eggs. Capsicum is always available at our home, as i would prefer to use bell peppers in one or the other dish atleast thrice a week. How to make Sukku Kaapi Powder

Sukku Coffee powder is one of the healthy beverages we have in Southern parts of India. It is a natural remedy for cold, cough, indigestion problems and many more. In this version of sukku kaapi/coffee powder i have added more of coriander seeds to suit my taste. But in actual recipe it's used in less amounts than that is mentioned in this blog. Semiya kheer is a dessert which we enjoy during every other festival be it ganesh chaturthi, makarsankranti, diwali, ayudha pooja. My mom usually makes it with sabudhana (sago) and chironji seeds. Chicken uppu kari which literally translates to chicken salt curry is quite simple to make with the least of ingredients from your kitchen pantry. This is somewhat similar to pallipalayam chicken as it  uses onions and dry red chillies as one of the important ingredients but it does have its mild variations here and there.
