Chicken kati roll | Chicken Frankie | chicken wrap

Rava Kesari

Semolina/Rava kesari is a sweet dish made in south India. In Karnataka, they call it as kesaribath. Let's see the ingredients list:



Ingredients:

1 cup rava/sooji/semolina
1.5 cups sugar
A pinch of orange food color
3 cups of water
2 tbsp cashews
2 tbsp raisins
3 tbsp ghee
1/2 cup chopped fruits, preferably pineapple, apple and grapes

Steps:

1. Dry roast the rava till it turns light brown. Keep it aside.



2. In a pan, heat a tbsp of ghee and roast cashews, raisins. Keep it aside.





3. In the same pan, add another tbsp of ghee. Add chopped fruits and let it be on medium flame for 3 minutes.






4. Add 3 cups of water, food color.



5. Bring it to boil by keeping it on high flame.



6. When it's boiling heavily, slowly add roasted rava and keep stirring continuously on high flame. No lumps should be formed.




7. Switch off the flame and close the pan with a lid.

8. After 7-8 minutes, the water would have been absorbed by rava.



9. Switch on the stove to medium flame. Add sugar and stir well. Sugar melts and it's also absorbed by rava. Add roasted cashews and raisins. Mix it once.






10.  Finally, add a tbsp of ghee and switch off the flame. Serve it hot!

Palkova / Thirattupaal/ Sweet Khoya

Homemade sweets are always special as you have control over the sweetness ( well, i agree you cannot compromise on the sugar added to a sweet recipe) however we can assure brown sugar or jaggery could be substituted wherever possible and free of food colors and any other preservatives. In today's recipe, i'm going to share about a simple two-ingredient recipe which uses cow's milk - its palkova aka thirattupaal (sweet khoya). The process is quite cumbersome, however with a heavy bottomed non-stick pan, you can skip stirring quite often and sit back and watch while it gets simmered without being burnt. Choose the right vessel for this dish and you would be rest assured a hassle free recipe. Let's get into recipe and the steps. You can use full cream milk or buffalo's milk instead of cow's milk. Ragi/Finger Millet Chocolate Chunk Cake

Any day and every day i can eat cake, pastries and ice creams, no matter what! There are days when i dont eat egg or meat and in those days if had a craving for a cake and went ahead to make this eggless ragi cake as i ran out of maida/all purpose flour. Last week i had made chocolates at home and added those chocolates in this recipe instead of cocoa and sugar! Lastly I made a chocolate and whip cream frosting to complete the cake decoration and ofcourse to enhace the cake's flavour. Cauliflower fry without oil

Cauliflower pakoda is a crispy evening tea time snack. It is also one of those popular street foods in chennai. Also in bakery shops, they sell cauliflower pakodas freshly made every evening in front of our eyes. On a lazy day, we shall buy these pakodas and have it as a side dish for our lunch/dinner. I am sharing a recipe of cauliflower pakoda without deep fry in oil, using an oven. Potato is a staple vegetable in my pantry which i use any given day. Egg thokku or egg gravy is a very common lunch box menu which my mom makes it often, when she does not have the time to cook elaborate meals for my lunch over the weekdays.
