Evening snacks can be made interesting, at times it might become our dinner too! I made more number of veg puffs and ended up eating it all, so we skipped our dinner yesterday. This is my first try at making veg puff and it came out quite well in texture and taste. I'm happy to share the recipe here.
Ingredients:
1 sheet pastry puff, store bought or home made
1 medium sized onion, thinly chopped
1 green chilli
1/2 cup finely chopped carrot
1/4 cup finely chopped yellow bell peppers(capsicum)
1/2 cup finely chopped beans
1/4 tsp turmeric powder
1/2 tsp chilli powder
3/4 tsp garam masala
1 tsp ginger garlic paste
salt to taste
1 tbsp oil
1 tsp all purpose flour/maida for dusting
Steps:
1. Preheat the oven to 400 degrees Fahrenheit, for at least 20 minutes.
2. Thaw the pastry puff sheet as per packet instructions. If it is homemade and refrigerated, then bring it to room temperature, for about 40 minutes.
3. In a pan, add oil. Once it gets warm, add chopped onions and green chillies. Saute them for a minute. Then add all chopped vegetables and saute for 3-4 minutes.
Tip: Vegetables are of your choice. Most common vegetables used in veg puff are boiled potatoes, green peas, beans and carrots. I have not used boiled potatoes since its gonna take time. I wanted to make veg puff quickly hence skipped potatoes.
4. Add ginger garlic paste. Saute till the raw smell of ginger garlic paste goes away.
5. Add turmeric powder, chilli powder, garam masala and salt. Mix them well and saute for 2 minutes.
6. Add chopped coriander leaves and switch off the flame. Now, the mix veg stuffing is ready. Let it cool completely.
7. Once the pastry puff is ready, dust the chapati roller or a clean kitchen counter top with flour, preferably all purpose flour/maida.
8. In the sheet i have got, I have cut it into 3 long strips. Then I have cut each of the strips into 3 squares. So a total of 9 squares I have got at the end.
9. Take a square sheet. Add a tsp full of prepared mix veg stuffing to one side of the square sheet.
10. Brush the two adjacent sides of the square sheet (where the vegetable stuffing is kept) with water. You can also use your hands to wet the sides.
11. Take the other corner of the square sheet and close it completely by pressing on the sides.
12. Optionally, you can use a fork to design it thereby giving a good press on the sides.
13. In a similar way, prepare all other sheets with stuffing.
14. Transfer the veg puffs to a baking tray, lined with foil sheet.
15. Place the baking tray on the centre rack of the oven at 400 degree Fahrenheit, for about 23-25 minutes. After 25 minutes, the veg puffs looked like this, crispy on top and totally baked!
Tip: You can check at 20 minutes. It basically depends on the oven you use
16. That is all, the making of tasty and crispy veg puff. I'm gonna have it with tomato ketchup, you can also have green chutney.
