I tried to make veg momos(dumplings) using wheat flour for a change. Wheat flour is considered healthy as compared to Maida/all purpose flour. However authentic momos are made using maida/all purpose flour. There are two variations one with vegetables and another with chicken. Here I'm gonna detail out the recipe for steamed wheat veg momos. You can also fry the momos in oil.
Ingredients for the dough:
1 cup whole wheat flour
1/2 tsp salt
1 tsp oil
water as needed.
Ingredients for the stuffing:
1/4 cup finely chopped yellow bell peppers
1/4 cup finely chopped carrots
1/4 cup finely chopped onions
3 cloves of garlic, finely chopped
1/4 cup finely chopped cauliflower
1 tsp soy sauce
1 tsp black pepper powder
1 tsp oil
1/4 tsp salt
Steps:
1. In a bowl, mix together wheat flour, salt, oil. Then sprinkle water and knead the dough. Add water as you slowly knead the dough. Keep it covered with a damp cloth for 20-25 minutes.
2. In a pan, add oil. Then add chopped garlic pods. Saute it for a minute.
3. Add chopped onions, saute for a minute.
4. Add chopped vegetables, saute for 2 minutes. The crispness of the vegetables should be intact.
Tip: Alternatively, you can add the stuffing without even sauteing altogether. Onions and veggies get cooked while steaming/frying depending on the method you choose to cook the momos.
5. Add a tsp of soy sauce, black pepper powder and salt. Mix well. Switch off the flame and keep it aside.
6. After 25 minutes, take the dough and knead it again for 2-3 minutes. Make small balls out of the dough. A cup of flour gives about 7-8 medium sized momos.
7. Dust the chappati roller with flour. Take a dough ball, roll it over to make a circle. Outer regions should be thinner as compared to the center.
8. Take a tsp of sauteed vegetable stuffing and place it in the center of the circle.
9. Slowly start folding as shown in the pic, you will get frilled momos. You might not get it first try but it is easy when you do the folding slowly.
10. Repeat the same steps for all other dough balls. As and when you make the momos, keep them in a damp cloth and keep covered. This prevents from drying.
11. Using a rice cooker or idly cooker, steam the momos by placing them in the steamer plate. Here I have used electric rice cooker.
12. Make sure the momos do not stick to one another by keeping them apart.
13. Steam it for 11-12 minutes or until the outer portion of the momos is not sticky.
Tip: It is better to bring the water in rice cooker to a boil before placing momos in the rice cooker for steaming.
14. Momos are ready to be served with homemade tomato sauce. Enjoy this evening snack with a hot cup of tea!
