Chicken Kabob - Indian style

Chicken is like an ever favourite for all of us in my family. Be it chicken stir fry, pepper chicken, baked chicken, chicken kuzhambu (curry) or grilled chicken, it tends to get finished off soon as compared to other meat varieties despite the fact I only cook chicken, lamb, fish and shrimp. Chicken is my personal favourite too. Chicken kabob is grilled chicken threaded in a wooden skewer in which the chicken is marinated for at least an hour and up to overnight in the refrigerator.

The recipe I'm gonna share can be made in 1 to 1.5 hours though you have an option to marinate the chicken for more hours! For tonight's dinner, we had sambar, white rice, taro root pan roast, chicken kabobs and curd, yeah the list is like a never ending one but my tummy was so very full and i could not even move for a while. I can understand what you should be thinking by now - me being a foodie! No no - I'm not, only when my favourite items are being cooked and in the way, i like them to be cooked.


Ingredients:

500 gms of boneless chicken, cut into 2-inch square pieces
5-6 squared pieces of green bell pepper
5-6 squared pieces of yellow bell pepper
5-6 squared pieces of orange bell pepper
5-6 squared pieces of onions, prefer big onions
4-5 wooden skewers

To marinate:

2 tsp red chilli powder
1/2 tsp turmeric powder
1 tsp garam masala
1 tsp coriander powder
1 tsp black pepper powder
salt to taste
1 tbsp lemon juice
2 tsp thick curd
2 tsp ginger garlic paste
1 tsp cumin powder

Steps:

1. Chicken Kabobs are usually threaded on to wooden skewers and grilled until chicken pieces are cooked. This might almost burn the skewers and these skewers need to be soaked in water for half hour.



2. Clean and wash the chicken pieces well. Cut them into 2-inch thick square pieces.



3. In a bowl, add the chicken pieces. To this add all the ingredients listed under "to marinate".



4. Mix the chicken pieces with the masala powder. There is no need to add water since the chicken marinade needs to be thick and not dripping.



5. Let the marinated chicken sit for half an hour at room temperature. Meanwhile, you can cut the bell peppers and onions, keep them ready.



Tip: You can marinate the chicken for 4 hours or overnight in the refrigerator, in which case the marinated chicken should stay at room temperature for 30 minutes prior to grilling.

6. After half an hour, add the square cut bell peppers and onions. We are adding the veggies half hour before the grilling since the veggies tend to release water during the marination process.



Tip: You can add red bell peppers too or even mushroom, tomatoes, zuccini.



7. Now, preheat the oven to 400 degrees Fahrenhiet for 15 minutes.

8. After one hour of marination, take a soaked skewer and carefully thread the skewer with chicken and veggies of your order of preference. Here i have added orange bell peppers first, then chicken, then green bell peppers and onions.



Tip: Make a hole in the centre of the chicken/vegetable pieces while threading into the skewer. This helps in thorough cooking on all sides.

9. Place the loaded skewer on a wide pan, like a 9*13 inch pan. Repeat this for remaining chicken/veggies.




10. Once all the skewers are loaded, carefully place the skewers on the centre rack of the oven. Grill/broil it on high for 10-12 minutes on each side.



11. Flip the sides of the skewers and grill/broil on high for another 10-12 minutes. I used the baking tray to flip the chicken/veggie pieces.



Tip: The cooking time of the chicken depends on the size and thickness of the chicken pieces, it is better to check after 10 minutes if it is cooked enough.

12. Check if the kabobs are cooked. Then remove the skewers from the oven and place it in a plate.



13. Tada! Spicy chicken kabobs are ready to be served. You can serve them hot as starters or snacks to your family members. They would definitely love it.



14. Okay now it all looks delicious, what if you don't have an oven or a barbecue, do not worry! You can stir fry the marinated chicken in a pan with 2 tbsp of oil on medium flame for 8-10 minutes on each side. Then stir fry the veggies for 3-4 minutes on each side. You would definitely like the flavour of the chicken.
