Chocolate stuffed gulab jamun | Gulab Jamoon | Stuffed gulab jamun

Mushroom Manchurian

The easy to cook rice varieties are egg fried rice, coconut rice, lemon rice, raw mango rice and the list goes on. There needs to be a very good and tasty side dish for these type of rice dishes. You can savour Indian side dishes like masala vada, cauliflower pakoda, onion pakoda or even indo-Chinese dishes like gobi (cauliflower) Manchurian, vegetable Manchurian and mushroom manchurian. Today i made mushroom Manchurian to have as a side dish for egg fried rice. You can also have it as a starter.



Ingredients:

1 tsp soy sauce
2 cups of sliced button mushrooms
3 tbsp corn flour
4 tbsp all purpose flour /maida
salt to taste
1 tsp ginger garlic paste
1 tsp black pepper powder
1 tsp sugar
1 cup chopped capsicum/bell peppers of any colour
2 tbsp oil
3 tbsp spring onion greens, finely chopped
3 tbsp spring onion whites, finely chopped
2-3 garlic pods, finely chopped
2 green chillies, finely chopped

Steps:

1. The mushrooms tend to blacken out once being cut. Hence prepare the batter first and then cut the mushrooms. Heat oil in a pan for deep frying - while the oil gets heated up, you can prepare batter and mushrooms.

2. In a bowl, whisk together all purpose flour, salt, black pepper powder, 1/2 Tsp soy sauce, sugar, corn flour.



3. Add water little by little to make a slightly thick thin batter and keep it ready.



4. Wash and clean the mushrooms. Slice them into two halves.



5. Once the oil is heated up, dip mushroom slices into the batter completely and place it in the hot oil pot.





6. Fry it for about 70-80 secs each side.



7. Fry the mushrooms until they turn light brown on all sides.



8.Pat the fried mushrooms dry in with paper towels.



Tip: You can stop right here and have these fried mushrooms as such. Trust me, there are quite tasty :) and I gulped 4-5 pieces before making the Manchurian.

9. In a pan, add a tbsp of oil. Then add chopped garlic cloves and spring onion whites, green chillies, little spring onion greens. Saute for 3-4 minutes.




10. Add capsicum (bell pepper) pieces (square shaped) and saute till they get half-cooked on high flame. The capsicum needs to be crunchy and not completely cooked, which gives the dish a good texture.



11. After about 3 minutes, add a half tsp of soy sauce, necessary sugar and salt. Mix it well.



12. Add fried mushrooms and mix well together so that mushroom pieces get coated well with soy sauce. Prefer to keep the flame on medium-high, as there are chances to get burnt.




13. In about 2 minutes, switch off the flame.



14. Voila! Tasty mushroom Manchurian is ready to be served hot!

In today's recipe, i'm going to share about a simple two-ingredient recipe which uses cow's milk - its palkova aka thirattupaal (sweet khoya). The process is quite cumbersome, however with a heavy bottomed non-stick pan, you can skip stirring quite often and sit back and watch while it gets simmered without being burnt. Egg capsicum curry is little more spicy and equally tasty. The usual routine of eating either boiled eggs or egg burji or omlette is boring at times and we would like to eat something new recipe with boiled eggs. Stuffed Mirchi Bajji

Stuffed mirchi bajji is a spicy evening snack which you can enjoy especially on rainy days. The stuffing is made out of potatoes and carrots with few other spice powders like coriander powder, turmeric, ginger, green chilli, chopped coriander leaves and chopped onions. Upside Down Apple Sundae

Apple sundae is just a modification of the banana sundae recipe i wanted to try. Since i ran out of bananas in my pantry and had left with dozens of apple, I made this upside down apple sundae this is the most sweetest dessert i have ever tasted in my life. Cauliflower fry without oil

Cauliflower pakoda is a crispy evening tea time snack. It is also one of those popular street foods in chennai. Also in bakery shops, they sell cauliflower pakodas freshly made every evening in front of our eyes. On a lazy day, we shall buy these pakodas and have it as a side dish for our lunch/dinner. I am sharing a recipe of cauliflower pakoda without deep fry in oil, using an oven. Ingredients: 250 gms of cauliflower florets 1/2 tsp salt 1/2 tsp turmeric powder 1 tsp chilli powder 1/2 tsp garam masala powder 1 tbsp corn flour 1/2 tsp all purpose flower/maida 1/2 tbsp rice flour 1 tbsp chopped coriander leaves/cilantro (optional) 2 tbsp oil 1 tsp ginger garlic paste 1 tsp black pepper powder (optional) Steps: 1. Preheat the oven to 350 F. 2. Cut the cauliflower florets in medium pieces, not too small (they get burnt) and not too big (would not be crispy). 3. In a plate, mix together all the ingredients mentioned above. Sprinkle some water and mix well. I
