Eggs are rich in protein and it is advised by pediatricians for small kid starting at the age of one to feed one egg per day. This provides complete nutrients required for brain health and overall health of the toddlers. While there are plenty of options to cook egg, here is one omlette recipe that is loaded with lots of vegetables and little bit of cheese to make it as a favourite dish for kids. Here is a pic of my today's breakfast, the loaded veggie omelette with blueberry milkshake and some fruits like green apple and peach :)

4-5 button mushrooms 🍄
1/2 cup broccoli florets
1/4 cup yellow bell peppers 🌶, you can use any color
1/4 cup of spinach
Salt to taste
1 tsp black pepper powder
2 tbsp shredded cheddar cheese, or any cheese of your choice
3 eggs 🍳
1tbsp butter or oil
How to make loaded veggie omelette
1. Wash and cut the mushrooms into 4 pieces.
3. Sauté till the mushrooms turn color and shrink from its original size.
4. Now add finely chopped bell peppers and spinach 🍃 leaves and sauté for 2-3 minutes.
We sauté the spinach and bell peppers separately as spinach leaves get cooked faster than broccoli and mushrooms. Also we want the bell peppers to be little crunchy and hence sautéing it for only 2-3 minutes.

Tip: Any other vegetables can be used like onions, tomatoes 🍅, green chillies, jalapeños, olives etc.
5. In a bowl, whisk together 3 eggs, salt and pepper and set aside.

6. In the heated pan on low flame. Add remaining butter/oil.
7. Pour in the beaten egg and make it as a big round.
8. Let it cook for a minute or until the top layer starts to change its color, indicating it needs to be little sticky so that the veggies sit on the omlette perfectly.

9. Now add the sautéed vegetables 🥒, mushrooms 🍄, broccoli, bell peppers, spinach on one half of the omelette.
10. Sprinkle some generous amount of shredded cheese 🧀 on top of the veggies. Let it cook for a minute with a closed lid.

11. Then flip the other half of the omelette to cover the vegetables.
12. Remove the loaded veggie omelette from the flame.
13. Healthy vegetable omelette is ready.
14. Serve it with some fruits 🍉 as morning breakfast. Kids would love to have it as it is different from the regular omelette and also has spinach in it. This is a nice way of eating spinach as you don't feel the spinach in the omelette as it shrinks a lot while sautéing.
