Pav Bhaji is a very popular North Indian snack. Whenever we go to sowcarpet in chennai, we end up having pav bhaji with a squeeze of lemon and sliced onions with the side. Oh my Gosh! it tastes so good over there! I was craving to have pav bhaji for a while and even brought the pav (buns) from the store and keep dreaming about it. Finally, i had made it today and am gonna share the recipe with you all.

Ingredients:
Pavs/buns - 10
1 large onion, finely chopped
2 medium sized tomatoes, finely chopped
1 tsp ginger garlic paste
1 tsp red chilli powder
1/2 tsp turmeric powder
salt to taste
4 tbsp butter
3/4 cup finely chopped capsicum, any color
1/2 cup finely chopped, potatoes
1/2 cup peas
one lemon slice
3 tbsp chopped coriander leaves
For grinding the masala:

4 dried red chillies
1 tsp coriander seeds
1/2 tsp fennel seeds
1/2 tsp cumin seeds
1 inch cinnamon stick
5 pepper corns
3-4 cloves
1 small bay leaf
1 green cardamon
How to make pav bhaji in pressure cooker:
1. In a pan, dry roast all the ingredients listed under "grinding" till nice aroma comes.


Tip: Let the flame be on medium, otherwise the chillies get burnt easily.
2. Let it cool. Once cooled down, transfer it to a mixer and grind it to smooth paste by adding water little by little.

3. Heat a pressure cooker, add 2 tbsp butter. Then add chopped onions, saute till it becomes transparent.

4. Add ginger-garlic paste. Saute till raw smell goes off.

5. Add finely chopped tomatoes, saute till it turns mushy.

6. Add chopped capsicum. Cook for 2-3 minutes on medium flame.

7. Then add chopped potatoes, green peas and cook for another 2 minutes.

Tip: You can also add carrots if you prefer.
8. Add ground paste along with salt, red chilli powder and turmeric powder.

9. Mix it thoroughly so that the veggies get coated well with the paste. Add a cup of water. Check for salt.

10. Pressure cook on medium flame for 3 whistles.
11. Once the pressure is release by itself, mash the vegetables well. The gravy becomes little more thicker.

12. Add a tbsp butter, give it a good mix and cook on low flame for 3 minutes.

13. In a pan, add little butter and then toast the pav buns till they turn light brown on the inside. That's it - Pav bhaji is ready.


14. Serve the pav bhaji with a lemon slice and chopped coriander leaves, onions to your loved ones!
