Pasta is an Italian delicacy and i love eating it every other day, though with different sauces. By sauces i mean alfredo, marinara, basil pesto, avocado pesto, spinach pesto and the list goes on. Once you start cooking pasta at home, the options are plenty to experiment. Come, let's look at how to make a healthy avocado-spinach pesto pasta.
Ingredients:
1 cup of fussili pasta/shell pasta
1 tbsp + 2 tbsp olive oil
salt to taste
1 ripe avocado
1 cup of spinach
3 garlic pods
1 tsp lemon juice
1 tsp black pepper powder
handful of mixed nuts, almonds, pistachios, cashews or walnuts
How to make the Avocado pesto pasta
1. In a sauce pan, add 3 cups of water and bring it to boil. Then add the desired pasta along with a sprinkle of salt and tad olive oil.
3. In a bowl, take the cleaned and washed spinach. In place of spinach leaves, you can also use basil (the traditional pesto!)
4. In a blender/food processor/mixer, add handful of preferred nuts. I used cashews, pistachios and almonds.
Tip: You can use walnuts too.
5. Peel the ripe avocado, slice it and add it to the blender. Then add 3 garlic pods, a tsp of lemon juice and pepper powder.
6. Meanwhile, add the strained water to the spinach bowl and let it stand in the boiled water for 3-4 minutes. This is to make sure the spinach leaves are cooked. You can skip this step if you prefer to have raw spinach.
8. Heat a pan with 2 tbsp of olive oil.
9. Add the cooked pasta to it and make sure the pasta gets warm.
10. Once the pasta is warm and coated with olive oil, add the ground avocado pesto.
12. Tada! tasty avocado-spinach pesto pasta is ready! This is drool-worthy :)
