Mix veg paneer curry/sabzi

Vegetables have a lot of nutirious values as in comparison to the meat and poultry. If you eat the vegetables at right propotion, with a combined variety of veggies available in the market, that makes to lead us a healthy life in an easy way.

I'm being a non-vegetarian dont cook vegetable curry often, if i do it would be the potato and peas curry. Ofcoures, it's the husband man's favourite in vegetable curry. My family also prefers to eat non-veg most of the days, we somehow ignore the healthy vegetables.

I really wish there are more festivals and fasting days, so that we would run out of the non-veg recipes and left with only vegetarian dishes. In such days, i prefer to put all the vegetables available in the fridge and just cook them with tad masala powder. Top it with my favourite herb - parsely. This completes a healthy side dish and rest of the lunch menu would comprise of rice, one kuzhambu or sambar, rasam and fryums/papads. Here is a typical lunch scenes at my home - it's a purely north indian cuisine today :)

1/2 cup paneer cubes
1/2 cup potatoes, roughly chopped
1/2 cup carrots, roughly chopped
1/2 cup cauliflower florets, medium size
1 tsp sambar powder or red chilli powder
salt to taste
2 tsp oil
1/2 tsp turmeric powder
1 tsp cumin seeds
1 tbsp chopped parsley or chopped coriander leaves

How to make mix veg paneer sabzi/curry:

1. Cut the fresh homemade paneer into square pieces and keep it ready. Similary cut the vegetables, potato, carrot, cauliflower of the same shape as paneer cubes or any desired shapes.

Tip: You can use other veggies like peas, french beans, capsicum etc.

2. Heat a pan with oil and add cumin seeds and wait for a minute. Let the stove flame be medium.

3. Add the cut veggies except paneer cubes to the pan.  Then add sambar powder, a pinch of turmeric powder and salt. You can use sambar powder, as it has the correct proportion of red chillies, coriander seeds and few other spices.

Tip: If you do not have sambar powder, you can use 1/2 a tsp of kashmiri red chilli powder and 1/2 a tsp of corainder powder.

4. Add 1/2 cup of water and cook with a lid on medium flame for 7 minutes.

5. Then remove the lid and cook on medium flame for 5 minutes, till the veggies are thoroughly cooked.

6. Now add paneer cubes, check for salt. Stir fry the veggies and paneer for 5-6 minutes. You can keep the flame to low.

7. Garnish with chopped parsely or coriander leaves.

8. That's all the end of mix veg paneer curry making process. Hope you find it easy and try it at your home too.

9. Serve the mix veg curry with jeera rice, roti, naan, pulkas, chapatis or just plain rice and rasam.

10. I had a wholesome nutritious food for lunch today. It's rajma masala, mix veg paneer sabzi, jeera rice and roti :)
