Mutton usually takes longer to get cooked as compared to chicken. And if you cook it in a pan, it takes forever to prepare a mutton dish. We generally use pressure cooker to cook the mutton thoroughly and then saute the minimal spices and ingredients in a pan, finally add in the cooked mutton from cooker and finish the recipe quickly.
Here we gonna see one such recipe and it is the simplest gravy i could make using mutton/lamb pieces. Let's take a look at the ingredients and recipe.
350 gms of mutton pieces
1 big onion, thinly chopped
1 small tomato, roughly chopped
1 tsp ginger garlic paste
1 tsp curd
1 tsp red chilli powder
1 tsp cumin powder
1 tsp pepper powder
a pinch of turmeric powder
1 tbsp chopped coriander leaves
1 bay leaf
2 cloves
2 tsp cooking oil
salt to taste
How to make mutton gravy:
1. Wash the mutton pieces well with water and take it in a clean bowl.
2. To that add, curd, turmeric powder, chilli powder, 1 tsp oil, salt, cumind powder, ginger garlic paste.
3. Mix the mutton pieces along with the spice powders and marinate for two hours.
4. In a pressure cooker, heat a tsp of oil along with cloves and bay leaf. You can optionally add a small cinnamon stick too.
5. Add in the marinated mutton pieces to the pressure cooker along with a cup of water. Pressure cook for 5-6 whistles on medium flame.
6. Let the pressure settle down by itself. If you see the mutton is not cooked enough, you can pressure cook for another 1-2 whistles and check again.
7. Meanwhile, heat a pan with some oil and fry the thinly sliced onions till they become transparent.
Tip: You can add a little bit of salt to quicken the process. We have already added salt to the marinated mutton. So adjust salt accordingly.
8. Then add in the tomato and cook till it becomes mushy.
9. Now, add cooked mutton along with the gravy from the pressure cooker. Cook on medium flame with a lid on till it thickens and it all comes together.
10. Add chopped coriander leaves and cook for a minute.
11. Add a tsp of pepper powder. Mix it well and cook till water is absorbed. Switch off the flame.
12. Spicy mutton gravy is ready. Serve it with white rice or pulkas.
