Tomato 🍅 Rice 🍚

Every other mom out there wake up in the morning, thinking what to cook for their family on a given day. If you do not have much time say like an hour to prepare your meals for the day, then you could simply make variety rice. Variety rice are quick and easy recipes that usually helps many of the working women to make it on the go, less than 30 minutes or so. Tomato rice is not the veg biriyani or the kuska (chicken biriyani without chicken pieces). Tomato rice does not use heavy garam masala or even the chilli powder. The spice for the rice comes from ginger, green chillies and a select few spices like cloves, cinnamon and bay leaf. It's a one pot meal and is also kid friendly meal as it has vegetables in it. Today let's take a look at the preparation of tomato rice in one pot.

1 big onion
3 medium sized 🍅 tomatoes
2 green chillies, slit vertically
4-5 cloves
1 inch cinnamon stick
1 bay leaf
1/2 tsp finely cut ginger pieces
1 tbsp coriander leaves, chopped
1.5 cup of basmati rice
1/2 tsp turmeric powder
Salt to taste
1.5 cup of mixed vegetables, beans, carrots, capsicum
3.5 cups of water
1 tsp butter
2 tbsp cooking oil

How to make tomato rice

1. Wash the basmati rice and soak it in enough water for 20-30 minutes.

2. In a pan or a pressure cooker, heat oil and butter.

3. Add cloves, cinnamon, bay leaf and slit green chillies , sauté for a minute.

4. Add chopped ginger and sauté till raw smell goes off.

5. Add thinly sliced onions and a pinch of salt. Cook till the onions become transparent.

6. Add tomatoes and cook for 3-4 minutes.

Note: I have added half of regular tomatoes and half portion of grape tomatoes.

7. Add chopped vegetables, you can add any veggie of your choice. Here I have added carrots, beans and capsicum.

Potatoes and peas can also be added.

8. Then add requires salt and turmeric powder. Cook till the veggies are half dome. This might take 3-4 minutes on high 🔥 flame.

9. Add soaked basmati rice and sauté for 4 minutes on high flame.

10. Add chopped coriander leaves, mix well.

11. Add 3.5 cups of water. Check for salt. Cook on high flame till 3/4 of water is absorbed.

Once, 3/4 th of water is absorbed you can mix the rice carefully without breaking it.

12. Now, cover and cook the rice on low flame till all the water is absorbed and rice becomes fluffy.

Tip: If you are using a pressure cooker, use the lid without the weight and the gasket.
In case of using a pan, use the regular lid that comes with the pan or just any plate that covers the pan would do.

13. Tada! A complete nutritious one pot meal is ready.

14. Enjoy this simple tomato rice for lunch with chips or just plain curd or raita.
