Mutton/Lamb roast is a delicious side dish in which the mutton pieces are cooked in high pressure with black pepper corns. Then the cooked mutton is dry roasted in a drizzle of ghee along with few spices like ginger, garlic, green chilli, paprika and garam masala. To have a little bit of mushy feel, i added few onions pieces to the dish. It turns out to be a quick recipe to prepare for lunch menu, except for the time consumed in pressure cooking the mutton/lamb.

Other than that part, the time taken to prepare the spicy mutton roast is hardly 15 minutes from start to end. You must give it a try if you are a spicy food lover and enjoy eating meat varieties.

Ingredients:
500 gms of mutton pieces
1 big onion, finely chopped
2 green chillies, finely chopped
1 tsp finely chopped ginger
1 tsp finely chopped garlic
1 tsp garam masala
1 tsp red chilli powder/paprika
1 tsp black pepper corns
1 tsp salt
1 tbsp oil / clarified butter(ghee)
1 tbsp chopped coriander leaves
1/2 tsp turmeric powder
How to make Mutton roast:
1. Wash the mutton pieces thoroughly in clean water for 5-6 times.

2. In a pressure cooker, add the mutton pieces along with 1/4 cup of water, 1/2 a tsp salt and 1 tsp black pepper corns.

3. Pressure cook it for 7-8 whistles on medium flame or until the mutton is cooked al dente ( just cooked enough).

4. Take a heavy bottomed pan, preferably non-stick. Heat it with a tbsp of oil/ghee.

5. Add finely chopped onions and saute till it turns soft.

6. Then add finely chopped green chillies, crushed ginger and garlic. Saute till the raw smell of ginger-garlic goes away.


7. Add turmeric powder, half a tsp salt, red chilli powder and garam masala.

8. Add the mutton stock to the pan and cook for 3-4 minutes.

9. Now add the cooked mutton pieces to the pan.

10. Stir fry on medium flame till the mutton turns little brown.

11. Optionally you can add additional tsp of oil while roasting.

12. Finally after constant stirring of the mutton pieces, i got it all nicely roasted in 7 minutes on high-medium flame.

13. Tada! Mutton roast ready!

14. Lunch menu for today is ghee mutton roast, broccoli potato curry, sambar and white rice.

14. Serve the mutton roast, topped with coriander leaves, as a starter too!
