No preservatives or any chemical ingredients in this delicious home made strawberry jam! You wonder how ?! I have just used lemon juice as natural preservative and it did not taste bitter at all. All you could taste is the sweetness of the strawberry fruit. I could not even find the seeds of the berries in the resulting jam i made today. Yummy is the word to explain this fruit jam. Since my childhood days, i'm a great fan of mixed fruit jam from "Kissan" brand. Spread it over bun or bread - awe! it's a wonderful snack after schooltime.

Ingredients:
25 ripe strawberries, medium sized
150 gms of sugar
1 lemon, juice extracted
How to make strawberry jam:
1. Wash the strawberries thoroughly.

2. Cut the strawberries into small pieces and keep it ready.

3. Heat a non-stick pan and let it dry without even a drop of water.

4. Add the cut strawberries to the pan on high flame.

5. Immediately add sugar and stir.


6. Just in two minutes of time, the sugar starts to melt.


7. Once the sugar completely dissolves, add lemon juice and stir.

Tip: Lemon juice prevents the sugar syrup from crystallization, otherwise the added sugar forms white crystals during the cooking process.
8. In another 5-6 minutes, the strawberries get softened .

9. Keep stirring occasionally, and you will see bubbles coming up. At this point reduce the flame to medium.

10. After about 3-4 more minutes, you will see a saucy texture.


11. Now, you can mash the strawberries with the back of the spatula so that the texture of the jam would be smooth.

12. Keep stirring until the jam becomes thick and the color changes to reddish from the pink shades of the strawberry.

13. If you try to spoon it over to the pan, it should have a jelly texture. That's the right consitency of the jam.


14. Switch off the flame and let it cool.


15. Once cooled down, the strawberry jam is perfect in it's color and texture.

16. Soon after the jam cools down, transfer it to a glass container or a bowl, if it's gonna be finished off soon.

17. I had the strawberry jam spread on toasted bread, for evening snack.

18. The jam is so good that it was so aromatic all over my kitchen once i'm done with making this wonderful recipe.

19. I'm just falling in love of the color and texture of this jam.

20. I'm sure i would finish off this jam in just a day, hence not gonna store it in a bottle or container. Just tranferred it to a glass bowl.
