Strawberry Jam

No preservatives or any chemical ingredients in this delicious home made strawberry jam! You wonder how ?! I have just used lemon juice as natural preservative and it did not taste bitter at all. All you could taste is the sweetness of the strawberry fruit. I could not even find the seeds of the berries in the resulting jam i made today. Yummy is the word to explain this fruit jam. Since my childhood days, i'm a great fan of mixed fruit jam from "Kissan" brand. Spread it over bun or bread - awe! it's a wonderful snack after schooltime.



Ingredients:

25 ripe strawberries, medium sized
150 gms of sugar
1 lemon, juice extracted

How to make strawberry jam:

1. Wash the strawberries thoroughly.



2. Cut the strawberries into small pieces and keep it ready.



3. Heat a non-stick pan and let it dry without even a drop of water.



4. Add the cut strawberries to the pan on high flame.



5. Immediately add sugar and stir.





6. Just in two minutes of time, the sugar starts to melt.





7. Once the sugar completely dissolves, add lemon juice and stir.



Tip: Lemon juice prevents the sugar syrup from crystallization, otherwise the added sugar forms white crystals during the cooking process.

8. In another 5-6 minutes, the strawberries get softened .



9. Keep stirring occasionally, and you will see bubbles coming up. At this point reduce the flame to medium.



10. After about 3-4 more minutes, you will see a saucy texture.





11. Now, you can mash the strawberries with the back of the spatula so that the texture of the jam would be smooth.



12. Keep stirring until the jam becomes thick and the color changes to reddish from the pink shades of the strawberry.



13. If you try to spoon it over to the pan, it should have a jelly texture. That's the right consitency of the jam.







14. Switch off the flame and let it cool.





15. Once cooled down, the strawberry jam is perfect in it's color and texture.



16. Soon after the jam cools down, transfer it to a glass container or a bowl, if it's gonna be finished off soon.



17. I had the strawberry jam spread on toasted bread, for evening snack.



18. The jam is so good that it was so aromatic all over my kitchen once i'm done with making this wonderful recipe.



19. I'm just falling in love of the color and texture of this jam.

 

 20. I'm sure i would finish off this jam in just a day, hence not gonna store it in a bottle or container. Just tranferred it to a glass bowl.

In today's recipe, i'm going to share about a simple two-ingredient recipe which uses cow's milk - its palkova aka thirattupaal (sweet khoya). The process is quite cumbersome, however with a heavy bottomed non-stick pan, you can skip stirring quite often and sit back and watch while it gets simmered without being burnt. Choose the right vessel for this dish and you would be rest assured a hassle free recipe. Let's get into recipe and the steps. You can use full cream milk or buffalo's milk instead of cow's milk. Egg capsicum curry is little more spicy and equally tasty. The usual routine of eating either boiled eggs or egg burji or omlette is boring at times and we would like to eat something new recipe with boiled eggs. Stuffed Mirchi Bajji

Stuffed mirchi bajji is a spicy evening snack which you can enjoy especially on rainy days. The stuffing is made out of potatoes and carrots with few other spice powders like coriander powder, turmeric, ginger, green chilli, chopped coriander leaves and chopped onions. The mirchi or cubanelle pepper is slit and deseeded to allow room for the stuffing. Upside Down Apple Sundae

Apple sundae is just a modification of the banana sundae recipe i wanted to try. Since i ran out of bananas in my pantry and had left with dozens of apple, I made this upside down apple sundae this is the most sweetest dessert i have ever tasted in my life. Cauliflower fry without oil

Cauliflower pakoda is a crispy evening tea time snack. It is also one of those popular street foods in chennai. Also in bakery shops, they sell cauliflower pakodas freshly made every evening in front of our eyes. On a lazy day, we shall buy these pakodas and have it as a side dish for our lunch/dinner. I am sharing a recipe of cauliflower pakoda without deep fry in oil, using an oven. Ingredients: 250 gms of cauliflower florets 1/2 tsp salt 1/2 tsp turmeric powder 1 tsp chilli powder 1/2 tsp garam masala powder 1 tbsp corn flour 1/2 tsp all purpose flower/maida 1/2 tbsp rice flour 1 tbsp chopped coriander leaves/cilantro (optional) 2 tbsp oil 1 tsp ginger garlic paste 1 tsp black pepper powder (optional) Steps: 1. Preheat the oven to 350 F. 2. Cut the cauliflower florets in medium pieces, not too small (they get burnt) and not too big (would not be crispy). 3.
