Basundi is a sweet recipe made out of milk. A quicker version of basundi is made using condensed milk whereas the classic basundi is made by constant stirring of whole milk till it thickens a bit and adding the foamy layer to the sides of the pan and towards the end, just scrape off the malai (milk foam) and add it to the basundi. Nuts like almonds, pistachios and cashews are chopped and added to the basundi, of-course saffron strands too to enhance the taste of the basundi.

Ingredients:
6 cups of whole milk
2 cups of condensed milk
2 tbsp sugar
10 cashews, chopped
10 pistachios, chopped
10 almonds, chopped
few saffron strands
1/2 tsp nutmeg powder (optional)
How to make basundi:
1. Heat a heavy bottomed pan, (preferably non-stick)with 6 cups of milk on high flame.

2. Add condensed milk to it.

3. Keep stirring on medium flame for about 30 minutes or until the milk gets thicker. Add sugar to the milk.

This is totally optional, only if you need the basundi to be more sweet you can add sugar otherwise the sweetness to the dish is supplied by the condensed milk itself.

4. As and when the foamy layer forms on top of the simmering milk, using a spatula remove the layer and stick it to the sides of the pan.

5. Once the milk reduces to half of it's initial quantity, add nutmeg powder

6. Then add chopped nuts. Mix it well and let it simmer for a minute or two.


7. Finally add saffron strands.

8. Scrape down the the milk solids from the sides of the pan and add it to the basundi.


9. Switch off the flame and let it cool down a bit.

10. Serve the basundi warm or chilled.
