Breakfast recipes are a plenty and in today's blog we are going to see how to make a sweet breakfast dish out of banana and rice flour. You can use sugar instead of jaggery - choice is yours. Since you add ripened bananas which itself offers sweetness to the dish, adjust sugar/jaggery as per your taste.
The appam could also be made with idly batter tempered with mustard seeds, channa dhal, chopped onions, curry leaves and grated coconut for a non-sweet version. I would also share that recipe in some time.

Ingredients:
4 ripe bananas - medium sized
2 cups of rice flour
1 tsp cardamom powder or 2 cardamom pods
1/2 tsp salt
1/2 cup ghee or oil for frying
1/4 tsp baking soda
3/4 cup of roughly powdered jaggery
1 cup of water
3/4 cup of freshly grated coconut
How to make banana sweet appam:
1. In a sauce pan, heat a cup of water along with jaggery.
2. Once the jaggery melts down in the hot water, bring it to boil and switch off the flame. Let it cool down completely.
3. Then add rice flour little by little and keep stirring.

4. Continuously stir so that no lumps are formed.
5. Meanwhile, mash the bananas using a fork. Alternatively, you can use a blender or a food processor.
6. Then cardamom pods/powder, salt and a pinch of baking soda and whisk well using a fork.
7. Add the mashed banana to the jaggery + flour batter.
8. Grate the freshly sliced coconut using a mixer or blender.
9. Add grated coconut to the appam batter (jaggery + flour + banana). Mix it thoroughly.
10. Heat a paniyaram pan (the one shown below) and drizzle a little bit of ghee in each section of the pan.
tip: you can use any other cooking oil in place of ghee. Ghee tastes much better.
11. Using a laddle pour the appam batter onto the paniyaram pan.
12. Cook until the sides of the paniyaram starts to change its color to light brown.
13. Using a spoon or the wooden paniyaram stick that comes along with the pan, flip the paniyaram.
14. Repeat the steps for all the sections.
15. Drizzle a little bit of ghee over it. This step is optional.
16. Cook for another 3 minutes on medium flame or until done.

17. Remove the cooked appam from the pan and serve it hot! Repeat the cooking process for remaining batter.
