Homestyle chicken gravy is so special to me as it takes less time to cook with basic ingredients available in our kitchen pantry. First the chicken pieces are well cleaned and marinated with turmeric powder and let it rest for about 18-20 minutes. Then add it to a onion, tomato, fennel seeds, ginger-garlic flavored masala and saute till oil oozes out. Now, add the chilli powder and salt. Cook further by adding enough water and finally add garam masala, cumin & pepper powder. Tada! mouth watering yummy chicken gravy is ready.
Ingredients
1/2 kg chicken / 1 pound chicken with bones
2 tsp madras curry powder or 1 tsp red chilli powder plus
1 tsp coriander powder
1/2 tsp Garam masala powder
1/4 tsp turmeric powder plus 1/2 tsp turmeric powder for marinade
Salt to taste
2 tbsp cooking oil, you can use vegetable oil or olive oil or sesame oil
1 tsp fennel seeds
7-8 shallots or 2 medium sized onions, finely chopped
2 medium sized tomatoes, finely chopped
1 tsp ginger garlic paste
3 spring of curry leaves
1 tsp Pepper powder
1 tsp roasted cumin powder
How to make chicken gravy:
1. Wash the chicken pieces 6-7 times thoroughly with water. Then add half a tsp of turner powder and mix it well. Let it sit for 20 minutes.

Tip: using bones along tends to increase the taste of the fish. Also, I prefer to use the skin a little bit and if using skin , then use can reduce the usage of oil for cooking as skin releases more oil while being cooked.
2. Meanwhile, heat a pan with 2 tbsp of oil. Adjust oil preferences as per the type of chicken pieces you are using. Then add fennel seeds and fry for 30 secs.

3. Add finely chopped onions.

4. Now, add ginger-garlic paste and curry leaves. Sauté for 2-3 minutes.

5. You can even add the curry leaves along with fennel seeds for nice aroma.

6. Add finely chopped tomatoes and cook for a minute.

7. Add the marinated chicken pieces and mix well.

8. Immediately add 1/4 tsp turmeric powder and 2 tsp madras curry powder.

Tip: the madras curry powder I used here is my mom prepared one - I shall update my blog with detailed recipe of madras curry powder.

9. Stir it thoroughly and cook until oil oozes out. This might take couple of minutes and this step is very important for an enhanced taste of the chicken gravy. Add salt.

10. Then add 3/4 cup of water and cook it covered stirring occasionally for about12 minutes. By then chicken gets cooked. If not cook for few more minutes.

Tip: cooking time depends on the size of the chicken pieces.

11. Finally add pepper powder, garam masala powder and cumin powder. Mix well.

12. Switch off the flame and optionally garnish with chopped coriander seeds.

13. Serve the chicken gravy with chapati, rice, dosa and roti varieties. It is very apt for Sunday lunch! Do give it a try and share your lunch experience. I have taken this pic in day light and hence the variation in color ;)
