Fish fry is a recipe that uses minimal oil for shallow frying the marinated fish pieces. The ingredients used are very simple - chilli powder/sambar powder, salt, tamarind paste, curry leaves and turmeric powder.

After marination, let the fish sit for 5-10 minutes and using any cooking oil, shallow fry the fish in a pan.
Ingredients:
1 tbsp red chilli powder
1/4 tsp turmeric powder
salt to taste
1 sprig curry leaves
1 tbsp thick tamarind paste

How to make fish fry:
1. Clean the fish properly with enough water and cut into medium sized pieces.
2. In a mixing bowl, add all the ingredients except oil. Make sure each of the fish pieces are coated thoroughly in the masala paste.

3. Keep it aside for 10 minutes to marinate and let the flavors infuse.
4. Heat a tawa or a non-stick pan with a tbsp of oil. You can use vegetable oil or olive oil or sesame oil.

5. Slowly place the marinated fish pieces onto the heated tawa or skillet.


6. Cook on medium heat for 3-4 minutes.

7. Flip over and then cook for another 3-4 minutes. Drizzle some more oil over the fish pieces.

8. Keep flipping and cooking until it gets cooked well. The cooking time of the fish depends on the size of the pieces and also the type of fish you are using. King mackerel fish might need longer time to cook.

9. Add some curry leaves few minutes before switching off the flame. This gives a nice flavor to the cooked fish.
