Paneer kati roll recipe quite a lot of time and patience as it involved multiple preparation like paneer marination, dough preparation, spicy dip and the fresh salad preparation for the stuffing. But the taste of the dish is so damn good and you would end up making it atleast twice a week. Non-vegetarians can have a dash of egg when toasting the roll and it gets packed with more protein too! Also in today's recipe i have used, fresh home made paneer.

Here is the list of ingredients for the dish.
200 gms of paneer cubes, preferably small cubes
2 green chillies
1 large onion, thinly sliced
1 small carrot (juveniles)
salt to taste
2 tsp freshly squeezed lemon juice
1/2 tsp red chilli powder
2 tbsp hung curd/greek yogurt
handful of mint leaves

Paneer marination
3/4 tsp chat masala
3/4 tsp red chilli powder
3/4 tsp coriander powder
3/4 tsp salt
1 tbsp hung curd or greek yogurt
1 tsp ginger garlic paste
Dough
2 cups of maida or all purpose flour
3/4 tsp salt
1 tbsp oil
water as needed
How to make paneer kati roll:
1. In a bowl, add flour, salt and sprinkle a tbsp of cooking oil. Mix it all together.
2. Next, add water little by little and knead it to a smooth dough. Keep kneading for about 7-9 minutes so that it becomes soft. Then cover it with a wet cloth and let it rest for 30 minutes.
3. Meanwhile, cube the paneer into small pieces as seen below. I have used freshly made paneer today and there is no compromise to the taste of fresh paneer.
4. In a mixing bowl, add the spice powders mentioned under "paneer marination" and mix it all together.
5. There is no need to add water, as the moisture in the curd/yogurt would be sufficient.
6. Then add the cubed paneer to the marination and mix well. Let it sit for 10 minutes.
7. Heat a griddle or a tawa with a tsp of oil or butter and add marinated paneer cubes.
8. Shallow fry the marinated paneer cubes and sprinkle little oil by flipping them. It takes about 6-7 minutes to get the paneer toasted well.
9. Add sliced onions and carrots onto a bowl.
10. Add a dash of salt and red chilli powder and then squeeze half of a lemon over it.
11. Mix the onions and carrots well to blend with spices and lemon juice.
12. Now that the toasted paneer cubes and fresh onion & carrot salad is ready for the kati roll stuffing.
13. After 30 minutes of dough preparation, make small balls out of it and roll it over to a thin roti.
14. Heat a tawa and cook the roti on both sides. Optionally use oil or butter while flipping the rotis.
15. Now that roti is cooked well on both sides.
16. Meanwhile, add green chillies, greek yogurt and mint leaves along with a pinch of salt to a mixer or food processor. Blend it till smooth. Spicy mint dip is ready. Take a spoonful of mint dip and apply it over the center line of the roti as seen here.
17. On top of the green dip, add the toasted paneer cubes.
18. Finally add onion + carrot salad over the paneer cubes.
19. Fold the roti from both sides and pin it up using a tooth pick.
20. Repeat the process for rest of the dough.
21. Tada! Delicious paneer kati roll is ready!
22. Paneer kati roll serves as a complete nutritional breakfast or dinner dish. You can pack it as lunch for kids too. They would eat it without any fuzz!
