Kulif are a favorite dessert not only for kids but for grown-ups too! We grew up in a community where the kulfi wala comes to our area on a regular basis during summer holidays.

Kids would jump and go to get kulfi. Just remembering those memories while sharing the recipe of home made Pineapple kulfi :)

Ingredients:
3 cups of full fat milk
1 tsp cardamom powder or 2 cardamom pods
2 tbsp chopped or crushed almonds
few saffron strands
2 tsp rice flour (optional) mixed with 2 tbsp of milk
1.5 cups of sugar
1 cup of pineapple chunks
How to prepare pineapple kulfi:
1. Heat a heavy bottomed vessel with 3 cups of full fat milk.

2. Add few saffron strands and bring it to boil.

3.Then simmer down till the milk quantity becomes half.

4.Meanwhile prepare the rice flour mixture by adding it to cold milk.

5. Whisk together well.

6. Add few almonds along with cardamom pods to a food processor or mixer and ground it to a coarse powder.


7. Now, add sugar and rice flour mixture.


Tip: Adding rice flour quickens the thickening process. To get a better taste of the kulfi, you can avoid using rice flour.
8. Keep stirring on low flame till the sugar dissolves. If using rice flour, give it a quick stir so that no lumps are formed. Now, add powdered almonds and simmer for 2 minutes. Let it cool down completely.

9. Add pineapple chunks to a blender and process it till smooth.


10.Add the pineapple to the cooled down kulfi mixture and mix it nicely.

11. Scoop out the condensed pineapple kulfi mixture to the kulfi moulds carefully.


12. Refrigerate the kulfi moulds overnight or atleast 8 hours to set in.

13. Once the kulfi has set in, just place the mould in running tap water or warm water for few secs so that the kulfi comes out easily out of the mould.

14. Slice and serve the kulfi to your loved ones. It is a quite easy and tasty recipe to try at our home.
