Paneer Kheer

Paneer/Cottage cheese kheer is a sweet dish made using grated or freshly crumbled paneer slowly cooked in milk and sugar base. Few of the dry fruits like almonds, raisins, pistachios and cashews are finely chopped and added along with few saffron strands.

1/2 cup grated paneer or crumbled if using fresh homemade paneer.
3/4 cup of sugar
1.5 cups of full cream milk or cow's milk
1 tbsp of mixed dry fruits like almonds, cashews, raisins, pistachios
Few saffron strands
1/2 tsp cardamom powder

How to make Paneer kheer:

1. Boil 1.5 cups of milk in a heavy bottomed pan. I have used cow's milk in today's recipe.

2. Bring it to boil and let it simmer for 5-7 minutes.

3. Meanwhile, grate the paneer and keep it aside. I have used freshly homemade paneer.

4. Chop the nuts vertically and keep it ready.

5. Now, add sugar to the simmered milk and stir gently till sugar dissolves. You can use brown sugar as well, however it changes the color of the kheer slightly.

6. Then add grated paneer/cottage cheese and give it a stir.

7. Add chopped dry fruits/nuts and let it simmer for 8 minutes. Add few saffron strands.

8. Garnish with few more saffron strands and switch off the flame.

9. Serve the paneer kheer chilled. The paneer kheer stays good for 2-3 days when refrigerated.

10. You can optionally add rose petals and refrigerate to enhance the flavour. Look at how creamy the paneer kheer have come out.
