Mushrooms are my favorite plant-based food when i look for a chicken substitute just because of the fleshy part of it. Yummy yet simple recipes are made using mushrooms since its cooking time is very less. Mushroom tikka is one such recipe where the mushrooms along with few veggies are marinated with Indian spices and curd.

Ingredients:
6-7 button mushrooms
1 large onion
1 large tomato
1 large capsicum
3 tbsp cooking oil
For marination:
1/2 cup curd
salt to taste
1 tsp red chilli powder
1 tsp ginger garlic paste
1 tsp crushed kasoori methi/dried fenu greek leaves
a pinch of turmeric powder
1/2 cup gram flour
1 tsp garam masala powder
How to make mushroom tikka:
1. Wash the button mushrooms removing the stem part. Cut the capsicum or bell peppers into square shape, similarly onions and tomatoes. You could use pineapple, orange/red colored bell peppers too.

2. Now add all the ingredients listed under marination.

3. Mix everything thoroughly so that the spice powders get coated well.

4. Heat a tawa or a skillet and add a tbsp oil. Once oil is heated add the mushrooms and cook until they turn brownish on both sides.


5. Then add capsicum, sprinkle oil and cook on both sides.

6. Then add tomatoes, add a tbsp of oil and fry on both sides until they turn brown on both sides.

7. Finally add onions along with few spoons of oil and fry on both sides. You can cook the veggies in any order as you would prefer but not all of them at once since each of the vegetable variety takes its own time to cook.

8. Then take skewer sticks and arrange the fried vegetables. Put the skewers onto the tawa and drizzle some oil so that the sides of the veggies turn crisp and cooked well.

9. Tada ! yummy mushroom tikka is ready. Alternatively you can bake the veggies along with skewers in oven.
