Vegetable pulao is a cooked with less spices as compared to vegetable biriyani with the choice of any vegetables like peas, cauliflower, french beans, carrots etc. There is absolutely no spice powders like chilli powder, coriander or turmeric powder in this recipe and is also very kid friendly. This can be a lunch box recipe too if you are looking for a mild spice meal.

Ingredients:
2 tbsp ghee
1 bay leaf
2 cardamom
2-3 pepper corns
1/2 tsp snauff
1 inch cardamom
2-3 cloves
2 large onions, sliced
1 tomato sliced
50 gms of meal maker/soya chunks soaked in water for 10 minutes.
hanful of sliced carrots or 1/2 cup of carrots, can add french beans, peas too.
1 cup of basmati rice (250 ml), washed and soaked in enough water for 20 minutes
1 tbsp of chopped coriander leaves
2 green chillies, slit
1 tsp chopped garlic & ginger or 1 tsp ginger garlic paste
1.5 cups of water
3 tsp of lemon juice
How to make vegetable pulav:
1. Heat a pressure cooker or a heavy bottomed pan. Add 1 tbsp ghee and add bay leaf, cinnamon, cardamom, pepper corns and cloves. Fry for few seconds.
2. Add sliced onions and fry till they become translucent.
3. Now add slit green chillies and ginger-garlic. Fry till the raw aroma of ginger-garlic goes away.
4. Add tomatoes and cook till it turns mushy.

5. Add vegetables, here i'm using carrots alone. You can add cauliflower, beans, peas of your choice.
6. Then add soaked meal maker/soy chunks and cook for about 2 minutes.
7. Add soaked basmati rice and mix gently.
8. Add 1.5 cups of water.
9. Then add lemon juice.
10. Finally add salt and give it a mix.
11. Then add 1 tbsp ghee, pressure cook on medium flame for 2 whistles.
12. Let the pressure settle down by itself and then open the lid of the pressure cooker.
13. Transfer the vegetable pulao to a wide vessel while it is warm.
14. Serve the vegetable pulao with a side of your choice or simply onion raita. Here we had the vegetable pulao with kadai paneer.
