Hot and Sour Soup

Soups are healthy as it is consumed with the veggie or chicken stock, pepper, garlic and ginger - the essence of these healthy ingredients and their nutritional value is definitely a good starter for any meal. Hot and Sour soup is favorite for most of us. Lets see the recipe of this veggie hot and sour soup today.

Ingredients:

1 large onion, finely chopped
1 tsp chopped ginger
1 tsp chopped garlic
1 green chilli, finely chopped
1 tbsp cooking oil
3 button mushrooms, thinly sliced
1/4 cup thinly sliced cabbage
1/4 cup capsicum, cut lengthwise
1/4 cup juveniled carrot
1 tsp soy sauce
salt to taste
1 tsp vinegar
1 tsp black pepper powder
2 + 1/4 cups of water
1 tbsp corn flour
2 tsp chopped coriander leaves

Steps:

Heat a non-stick pan or a heavy bottomed pan with cooking oil. Add finely chopped ginger, garlic, green chillies and onions. Saute till the onions turn light brown.


Add sliced mushrooms and saute on high flame till mushrooms turn light brown.


Add sliced carrots and cook for 2 minutes.


Add capsicum and cabbage. Cook on high flame for about 3 minutes. The vegetables need to be crunchy.



Add water and bring it to boil.


Add soy sauce.

Add salt.


Mix 1/4 cup of water with corn flour and whisk nicely without lumps. Add corn flour paste to the pan.


Add vinegar.


Let it simmer so that the soup thickens a bit.



Add pepper powder.


Finally add chopped coriander leaves and switch off the flame.


Serve the vegetable hot and sour soup hot!
