Finger millet is the most common multigrain used in my kitchen atleast twice a week in the form of adai or kanji or pancakes. It has various health benefits and helps reduce blood sugar level too. I have a pack of store bought ragi flour, you can also use homemade sprouted ragi flour to get more nutrition out of it.

All you need for this recipe is a handful of grated coconut, brown sugar or white sugar or Jaggery with ragi flour. Maple syrup or sugar syrup or honey could be used with these pancakes. This is one of the best and healthiest pancake recipe i have ever made and of course i like it too!

Ingredients:
1 cup ragi/finger millet flour
a pinch of salt
1/4 sugar/brown sugar/jagerry
1 cardamom
1/2 cup grated coconut
3/4 cup of water
2 tbsp ghee/clarified butter or butter for cooking
Steps:
Take all the ingredients to a bowl and whisk together well.
Add water and bring it to a pancake or idly batter consistency.
Heat a tawa or griddle and add a tsp of ghee or butter. Pour in a laddle full of batter to the tawa and leave it.

Drizzle some ghee or butter on top. Let it cook on medium flame for about 2-3 minutes.

Cover and cook the pancakes.

Flip and cook for another 2 minutes or until done.

I have added 3 pancakes at a time since my pancakes are small.

Tada! healthiest pancakes are ready.

Top it with some maple syrup or honey to enjoy for breakfast.

Here i have used a local agmark brand honey and it was yum!
