Chapati or roti is a staple food in almost every part of North India and few parts of south India. It can be paired with a wide variety of side dishes like

paneer butter masala
Rajma masala
channa masala
mix veg subzi
broccoli potata curry
Egg capsicum curry
the classic Egg thokku
Dal makhani
Chicken gravy
The art of making soft chapatis or rotis lies in how we prepare the dough. There might be many tricks to it but i learnt my trick from one of my friend. It just makes use of 1/4 th part of water as hot water so that the dough becomes soft and after kneading it well for about 2-3 minutes you are sure to get soft rotis.

Ingredients:
1 cup wheat flour
1/4 cup hot water
1/3 cup water
1/2 tsp salt
1 tsp oil or clarified butter(optional)
Steps:
Take flour in a mixing bowl.

Add salt.

Add oil or ghee. This step is totally optional.
Crumble the flour together so that salt gets mixed evenly.

Now pour hot water over the flour and let it sit as such for 5 minutes.

After 5 minutes, start mixing the dough by adding normal water little by little.

Knead the dough for about 2-3 minutes. Brush it with some oil or ghee. Cover it with a damp cloth and let it sit for about 20 to 30 minutes before making chapati.

Knead the dough further for about a minute or so. You can see the texture of the dough like how soft it is.

Make small balls out of it. Chapati dough for soft chapatis is ready!

Now take dough, dust some flour onto the kitchen countertop or roti maker.

Make round shaped rotis or any other shapes using a cookie cutter.
