
while buying okra, you need to check for tender ones as the matured ones does not cook pretty well and also it will not taste good for this dish.

Ingredients:
250 gms of bhindi/okra/ladies finger
2 tsp cooking oil
1/2 tsp mustard seeds
1/2 tsp urad dhal(split black gram)
2 broken dry red chillies
4-5 shallots
salt to taste
1/2 tsp turmeric powder
Steps:
Heat a non stick pan . Add oil - once it gets hot, add mustard seeds and urad dhal.

When mustard splutters, add dry red chillies.
After few secs, add finely chopped garlic. Saute for a minute.
Add chopped shallots. Saute till translucent.
Add chopped okra. Cook till the stickiness goes away.
Add turmeric powder and salt.
Cover and cook for about 12 minutes with stirring in between to avoid burning.
Check if the vegetable is cooked. If using tender ones, then cooking time is faster.
Cook it and cover further for few minutes until soft.
Switch off the flame.
Tada! Tasty okra fry is ready. Serve it hot with rice or roti.
