Beans paruppu usili is a very common dish in TamBrahm families. I got to know about this dish from my college friend who is a kannadiga Brahmin. We infact made her mom write all of her drool worthy and got each of us a copy.
This dish goes well with sambar rice and curd rice. It needs a little preparation ahead of time though for soaking channa dhal. Other vegetables that can be used in place of beans are cluster beans, carrot, beans, broccoli, banana stem, beetroot and radish. Do try out this recipe and share your valuable feedback. Ingredients:
100 gms of channa dhal/bengal gram
2 dry red chillies
1 large onion, finely chopped
1 tsp mustard seeds
1 tsp urad dhal/split black gram
250 gms of french beans
salt to taste
a pinch of turmeric powder
1 tbsp cooking oil
1 sprig of curry leaves
1 tsp chopped coriander leaves (optional)
Steps:
Soak Channa dhal for about 2 hours.
Chop the beans finely by removing the thin string on both sides.
pressure cook chopped french beans for a whistle or cook in a pan with little water until they are cooked just enough.
Then add soaked channa dhal to a mixer and grind it to a coarse paste. Do not add water.
Steam cook the dhal for 15-20 minutes.
Heat a kadai or pan with oil.
Add mustard seeds and urad dhal.
Once it starts to sputter, add broken dry red chillies and curry leaves.
Tip: You can also add hing.
Then add finely chopped onions and saute till translucent.
Channa dhal is cooked nicely. Crumble it a little before adding it to the pan.
Now, add steam cooked channa dhal.
Drizzle some oil and cook till the channa dhal gets little browned and crunchy.
Add Cooked beans and mix well. Cook for another 5-6 minutes on medium flame.
