Corn is a healthy snack for all age groups and is liked by everyone. We usually eat boiled sweet corn as our evening snack. Today we tried crispy corn recipe for our snack and it turned out pretty nice. I'm here to share the step wise pictures and the recipe.
This is a fool-proof toddler friendly recipe which you can give for babies above one year or so.
Here is a list of few other snack items available in my blog -
Ingredients:
1 cup corn kernels
2 tbsp corn flour
1 tbsp rice flour
water as required
1/2 tsp salt
1/2 tsp pepper
oil for deep frying
How to make crispy corn:
Remove the corn kernels from the cob.
Add 3 cups of water in a sauce pan and bring it to boil.
Then add corn kernels. Boil for 6-7 minutes, so that corn cooks till soft. Otherwise, when we dip in flour and add to oil it pops and oil splutters which is not safe.
Once it's boiled, strain the water out.
Meanwhile, to a mixing bowl, add rice flour, corn flour, salt and pepper.
Crumble the mixture together.
Then add water little by little.
Mix it to a thick pouring consistency.
Add boiled corn kernels and mix well.
Let the corns be coated with flour.
Heat oil in a wok or kadai till it's hot. Slowly add the dipped corn kernels in small batches.
Let it cook on medium flame till crisp.
It changes the color slightly. Then remove it from oil.
Sprinkle some salt and optionally any spice powders of your choice like chat masala, red chilli powder or garam masala. If serving for kids and toddlers, serve it as such without any spices.
Serve the crispy corn when it's warm as a tea time snack.
