A quick and easy protein rich side dish is egg burji or egg podimas as we call it in Tamil.
It goes well with sambar rice, rasam rice and any tangy gravy too. Let's see the ingredients list.

Ingredients:
3 large eggs
3 large eggs
1 large onion, finely chopped
1 green chilly finely chopped
1 sprig of curry leaves
1 tsp chopped coriander leaves(optional)
1/2 tsp black pepper powder
salt to taste
1 tsp oil
How to make egg burji:
Heat a wok and add oil.
Then add sliced onions, curry leaves and green chillies.
Saute till onions turn translucent.
Add salt.
Add 3 eggs to it.
Add salt.
Give it a gentle stir occasionally on low-medium flame.
Sprinkle some black pepper powder.
Once the eggs are cooked thoroughly add chopped coriander leaves and switch off the flame.
Tada! egg burji is ready.
