Millets are the new trend in town for weight watchers, aged people and toddlers too! today's recipe is all about kudo millet which has good protein and fibre content. It's also easily digestible and hence recommended highly for old aged groups and babies/toddlers.
Let's see the ingredients list.
2 cups of varagu arisi/kudo millet
3/4 cup of moong dhal
1 inch ginger finely chopped
a sprig of curry leaves
1 tbsp ghee/clarified butter
5-6 cashews whole or broken
1 tsp cumin seeds
a fat pinch of turmeric powder
a pinch of hing
salt to taste
How to make ven pongal with varagu arisi:
Wash and soak moong dhal and kudo millet for half hour.
Add 2 cups of water, a pinch of turmeric powder and salt as required.
Pressure cook for 5 whistles on medium flame. Let the pressure release by itself.
Heat a pan with ghee.
Add cumin seeds. Let it crackle.
Add finely chopped ginger. Saute for a minute.
Add broken cashew nuts.
Add curry leaves.
Add a pinch of hing.
Fry till cashews turn golden brown.
Finally add cooked millet and dhal. Stir in quickly with the tempered ingredients. Switch off the flame.
Serve varagu ven pongal when it's hot with a condiment like chutney or sambhar.
