Bok Choy chicken stir fry is from Asian cuisines and it's one of those simplest stir fry recipes i would crave for any given day, served with white rice or fried rice. Yum is the word to describe it's taste. If you are hardcore desi food fan, then you might not be clinging to this recipe since, it's cooked with less spices and the very basic ingredients like ginger, garlic, pepper and some sauces that are available in my pantry.
As to me, bok choy is one cute vegetable which gives me immense happiness as i see it or hold it! Can't deny it - you see :)

Ingredients:
100 gms of chicken, boneless
4-5 bok choy stalks with leaves
1 tsp red chilli flakes
1/2 tsp pepper powder
salt to taste
1 tbsp olive oil or sesame oil, whichever cooking oil that has high smoking point.
3-4 garlic cloves, finely chopped
1 inch ginger, finely chopped
1 tbsp green chilly sauce
1 tsp red chilly sauce
How to make bok choy chicken stir fry:
Wash 4-5 bok choy stalks. I took a large sized bok choy.
Chop them into juveniles.
Wash and slice the chicken into thin pieces, lengthwise. Heat a wok and add oil.
I have used olive oil in today's recipe.
When it is hot enough, add garlic and ginger pieces. Sautee for 30 secs.
Then add sliced chicken.
Add bok choy.
Stir fry till the bok choy shrinks a bit. Add green chilli sauce.
Add tomato sauce.
Add salt.
Toss well and cook on high flame. Chicken gets cooked in about 12-14 minutes, since it is thinly cut and small chunks.
Add black pepper powder.
Add red chilli flakes.
Give it one good stir. Switch off the flame. Tada! yummy bok choy chicken stir fry is ready!
Serve bok choy chicken with hot steamed rice and enjoy.
