Pineapple is my most favorite food and the most fruit that i craved for all throughout my pregnancy. I'm still not sure why it is advised to have pineapple in limited amounts (only in India) but it's one such fruit where you have the sweetness and a little bit of sourness. The two best combinations that i can ask for is Thai food and pineapple - yes it's pineapple fried rice. Today i had chicken breast and made chicken pineapple fried rice. Hope you enjoy this recipe and try it at your home.
1/2 cup chopped pineapple chunks
1/2 bell pepper, juveniled
1/2 cup cabbage juveniled
1/2 cup carrot juveniled
1 tsp vinegar
2 tsp green chilli sauce
1 tbsp tomato ketchup
2 tbsp oil
a pinch of turmeric powder
1/2 tsp red chilli powder
1 tbsp black pepper powder
salt to taste
2 tsp finely chopped garlic
1 tbsp chopped coriander leaves or onion greens
3 cup cooked rice
1 egg
How to make pineapple fried rice:
Wash and chop the vegeatables and pineapple.
Transfer the chicken onto a plate. Heat the pan.
Add oil.
When the oil is smoking hot, add chopped garlic.
Add carrots and cook on high flame for about 4 minutes.
Add bell peppers and cook for two minutes.
Add cabbage and cook for two minutes.
Add pineapple and sauté for 30 secs.
Add salt.
Add a dash of vinegar.
Add chilli sauce.
Add tomato sauce.
Finally add fried chicken and give it a good stir.
Add cooked rice. You can use regular rice or basmati rice.
Toss it well on high flame. Slant the pan a little so that the flame touches edges of the pan to give a smoky flavor.
