Chicken sukka is a means of cooking whereby chicken is roasted with Indian spice powders without adding any water and it is a dry one. It serves as a good side dish for roti or biriyani or any variety rice. It can be served as a starter as well.

Ingredients:
500 gms of chicken
2 large onions, finely chopped
1 green chilli
1 bay leaf
3 cloves
a tsp of fennel seeds(optional)
1 tbsp + 1 tsp of cooking oil
salt to taste
1 tsp garam masala powder
1 tsp red chilli powder
a pinch of turmeric powder
1 tbsp chopped coriander leaves
How to make chicken sukka varuval:
Clean chicken pieces with water until the water run clear without any red color stains. You can use turmeric powder to coat the chicken pieces before cleaning.
Heat a wok with a tbsp of oil.
This process will release a bit of water from the chicken pieces.
Flip and cook the chicken pieces.
Transfer it to a bowl along with the chicken stock if there is any left.
Heat the same pan and add a tsp of cooking oil.
Add bay leaf, cinnamon and cloves. Fry for few seconds until aromatic.
Add seared chicken pieces.
Then add chopped or crushed ginger-garlic. Add chopped onion and green chillies.
Cook till raw smell goes away.
Add kosher salt/crystal salt as required.
Then add turmeric powder, red chilli powder and garam masala.
Mix it well and cover and cook for 10-12 minutes on medium flame.
Stir in between to avoid sticking to the bottom and add a tsp of oil.
The chicken pieces are thoroughly cooked after 12 minutes. Depends on the size of the chicken pieces. So adjust time accordingly. Add chopped coriander leaves and switch off the flame. The meat looks so yummy as it has browned a little bit!
Voila! yummy chicken sukka is ready.
Serve chicken sukka as a starter or as a side dish for biriyani or any rice varities.
